Yap\u0131lan bu inceleme sonucunda m&uuml;fredat kapsam\u0131nda farkl\u0131 e\u011fitim programlar\u0131nda yer alan derslerin asgari yeterlilik d&uuml;zeyinde bulunmas\u0131 gerekti\u011fi vurguland\u0131. Uygulamal\u0131 ve teorik ders da\u011f\u0131l\u0131m\u0131n\u0131n dengeli bir \u015fekilde olu\u015fturulmas\u0131 i&ccedil;in &ouml;zenli bir &ccedil;al\u0131\u015fma ihtiyac\u0131 g&ouml;r&uuml;ld&uuml;. Bununla beraber programlarda mevcut derslerin e\u011fitim ihtiyac\u0131n\u0131 tam anlam\u0131yla kar\u015f\u0131lamad\u0131\u011f\u0131 konusunda uzla\u015f\u0131larak, derslerin i&ccedil;eriklerinin gastronomi alan\u0131n\u0131n ihtiya&ccedil;lar\u0131 g&ouml;z &ouml;n&uuml;ne al\u0131narak olu\u015fturulmas\u0131 gereklili\u011fi &uuml;zerinde duruldu. Ayr\u0131ca b&ouml;l&uuml;mlerdeki se&ccedil;meli ders &ccedil;e\u015fitlili\u011finin art\u0131r\u0131lmas\u0131 &ouml;nerildi.&nbsp; B&ouml;ylelikle m&uuml;fredat\u0131n, h\u0131zl\u0131 de\u011fi\u015fen ihtiya&ccedil;lara yan\u0131t vermesi sa\u011flanarak, &nbsp;&ouml;\u011frencilerin uzmanla\u015fmak istedikleri alanlara y&ouml;nelmelerine f\u0131rsat verilmesi gereklili\u011fi &uuml;zerinde duruldu. Gastronomi e\u011fitiminin bir par&ccedil;as\u0131 olan ve &ouml;ncelikli olarak kendi yerel k&uuml;lt&uuml;r&uuml;m&uuml;zden k&uuml;resel k&uuml;lt&uuml;re do\u011fru bir geli\u015fim g&ouml;stermesinin &ouml;nemi &uuml;zerinde duruldu. Alanda eksikli\u011fi fazlaca hissedilen T&uuml;rk&ccedil;e kaynaklar\u0131n, yap\u0131lacak akademik &ccedil;al\u0131\u015fmalarla ve yay\u0131nlarla birlikte art\u0131r\u0131lmas\u0131n\u0131n gastronomi e\u011fitimine sa\u011flayaca\u011f\u0131 katk\u0131lar\u0131n &ouml;neminden bahsedildi. Gastronomi lisans programlar\u0131n\u0131 tercih edecek &ouml;\u011frencilerinin niteli\u011finin art\u0131r\u0131lmas\u0131 i&ccedil;in b&ouml;l&uuml;m tercihinde kullan\u0131lan puan t&uuml;r&uuml;n&uuml;n EA olarak belirlenmesi &ouml;nerildi. Lisans ve lisans&uuml;st&uuml; e\u011fitim i&ccedil;in gastronomi alan\u0131nda uzmanla\u015fm\u0131\u015f &ouml;\u011fretim &uuml;yesi yeti\u015ftirilmesine olan ihtiya&ccedil; vurguland\u0131.\n<\/p>\n<p>\n\t<strong>&Uuml;niversite Sekt&ouml;r \u0130\u015fbirli\u011fi:&nbsp;<\/strong>Ba\u015fl\u0131kla ilgili olarak de\u011ferlendirme yap\u0131ld\u0131\u011f\u0131nda &ouml;ne &ccedil;\u0131kan sorunlar\u0131 \u015funlard\u0131r: &Uuml;niversitelerde verilecek e\u011fitimlerde m&uuml;fredat haz\u0131rlan\u0131rken sekt&ouml;r temsilcilerinin dahil edilmemesi, mezun durumundaki &ouml;\u011frencilerin beklentilerinin y&uuml;ksek olmas\u0131, staja giden &ouml;\u011frencilerin i\u015f ba\u015f\u0131 e\u011fitimi \u015feklinde de\u011fil de &ouml;\u011frencinin de personel olarak g&ouml;r&uuml;lmesi ve i\u015fletmenin beklentisinin bu &ouml;\u011frencilerden y&uuml;ksek olmas\u0131, staja giden &ouml;\u011frencinin &uuml;cret sorunu, staja gidenlerin a\u011f\u0131r \u015fartlarda &ccedil;al\u0131\u015ft\u0131r\u0131lmas\u0131 ancak e\u011fitim boyutunun eksik b\u0131rak\u0131lmas\u0131 yani sekt&ouml;rde i\u015flerin beklenen d&uuml;zeyde &ouml;\u011fretilmemesi, staj s&uuml;re ve zamanlar\u0131n\u0131n uygun olmamas\u0131, sekt&ouml;r&uuml;n okullara sponsor olmamas\u0131 ve uygulama mutfa\u011f\u0131 gibi fiziksel altyap\u0131n\u0131n olu\u015fturulmas\u0131 a\u015famalar\u0131nda destek sa\u011flamamas\u0131 ve daha b&uuml;y&uuml;k yat\u0131r\u0131mlarla bu alana &ouml;nem verdi\u011fini g&ouml;stermemesi, e\u011fitimli ve alayl\u0131 &ccedil;at\u0131\u015fmas\u0131n\u0131n olmas\u0131, sekt&ouml;r taraf\u0131ndan istihdam ve kariyer g&uuml;vencesinin verilmemesi ve alana giri\u015fin kolay olmas\u0131.<br \/>\n\t&Ccedil;al\u0131\u015fma grubu taraf\u0131ndan sorunlara getirilen &ccedil;&ouml;z&uuml;m &ouml;nerileri ise \u015fu \u015fekilde belirlendi: E\u011fitimcilerin sekt&ouml;rle i\u015fbirli\u011fini bir ihtiya&ccedil; olarak g&ouml;rmesi ve bunu sekt&ouml;rden talep etmesi, m&uuml;fredatlar\u0131n haz\u0131rlanmas\u0131nda yurt d\u0131\u015f\u0131ndaki programlar\u0131n aynen al\u0131n\u0131p uygulanmas\u0131 y&ouml;ntemi yerine sekt&ouml;r ve &uuml;lke ihtiya&ccedil;lar\u0131na g&ouml;re m&uuml;fredatlar\u0131n d&uuml;zenlemesi, payda\u015flar\u0131n bilin&ccedil;lendirilmesi, medyan\u0131n do\u011fru bilgilendirmesi, \u015fef ve &ouml;\u011fretim &uuml;yelerinin &ouml;\u011frencileri kariyerleri konusunda do\u011fru bilgilendirmeleri, staj\u0131n e\u011fitim s&uuml;recinin devam\u0131 oldu\u011funu i\u015fletmeler taraf\u0131ndan benimsenerek &ouml;\u011frencilerin kendilerini de\u011ferli hissedecek motivasyonlar\u0131n olu\u015fturulmas\u0131, &ouml;zel sekt&ouml;rde de devlette oldu\u011fu gibi stajyer &ccedil;al\u0131\u015ft\u0131rma zorunlulu\u011funun getirilmesi, &ouml;\u011frencilere en az asgari &uuml;cretin &ouml;denmesi, staj ko\u015fullar\u0131na standartlar\u0131n getirilip denetimlerin yap\u0131labilir olmas\u0131. Ayr\u0131ca; akademik takvimin sekt&ouml;re g&ouml;re yeniden g&ouml;zden ge&ccedil;irilmesi ve staj s&uuml;relerinin uzat\u0131lmas\u0131, &uuml;niversitelerin fiziksel altyap\u0131lar\u0131ndaki eksiklikler ve e\u011fitim kalitesinin y&uuml;kseltilmesi konusunda &uuml;niversitelerin sekt&ouml;r&uuml; zorlamas\u0131, ileti\u015fim ve koordinasyon eksikli\u011finin giderilmesi, i\u015fletmelerin staj yapan &ouml;\u011frencileri staj ya da mezuniyetleri sonras\u0131nda istihdam etme konusunda daha istekli davranmalar\u0131n\u0131n sa\u011flanmas\u0131, meslek yasas\u0131 getirilerek sekt&ouml;rde istihdam kalitesinin art\u0131r\u0131lmas\u0131, &uuml;cret politikas\u0131n\u0131n g&ouml;zden ge&ccedil;irilerek mezunlara i\u015f f\u0131rsat\u0131 sa\u011flanabilir.\n<\/p>\n<p>\n\t<strong>Akademik Kadro Sorunlar\u0131:<\/strong>&nbsp;Gastronomi, T&uuml;rkiye&rsquo;deki &uuml;niversitelerde yeni bir b&ouml;l&uuml;m olmas\u0131 dolay\u0131s\u0131yla mezun say\u0131s\u0131 hen&uuml;z yetersizdir. Buna ba\u011fl\u0131 olarak bu b&ouml;l&uuml;mlerde &ccedil;al\u0131\u015facak &ouml;\u011fretim elemanlar\u0131n\u0131n nicelik ve niteli\u011fi konusunda sorunlar ya\u015fanmaktad\u0131r. Gastronomi, bir&ccedil;ok disiplinden beslenen bir bilim dal\u0131d\u0131r. Gastronomi e\u011fitiminin; beslenme, g\u0131da, turizm, tarih, antropoloji, arkeoloji vb. bilim dallar\u0131yla birlikte y&uuml;r&uuml;t&uuml;lmesi gerekmektedir. Gastronomi e\u011fitimi, yo\u011fun uygulama gerektiren bir s&uuml;reci kapsamaktad\u0131r. Bu nedenle teorik dersleri y&uuml;r&uuml;ten &ouml;\u011fretim &uuml;yelerinin yan\u0131 s\u0131ra, sekt&ouml;r deneyimi olan, alan\u0131nda deneyimli usta &ouml;\u011fretici, &ouml;\u011fretim g&ouml;revlisi ve teknik donan\u0131mlardan sorumlu uzmanlar\u0131n da gastronomi b&ouml;l&uuml;mlerinde istihdam edilmeleri gerekmekte ancak usta &ouml;\u011fretici ve teknik eleman olarak uzman istihdam edilmesinde zorluklar ya\u015fanmaktad\u0131r. Gastronomi b&ouml;l&uuml;m&uuml; mezunlar\u0131n\u0131n akademik kariyere y&ouml;nlendirilmesi konusunda baz\u0131 s\u0131k\u0131nt\u0131larla kar\u015f\u0131la\u015f\u0131lmaktad\u0131r. Akademik personelin ayl\u0131k gelirlerinin sekt&ouml;rde &ccedil;al\u0131\u015fanlardan daha d&uuml;\u015f&uuml;k olmas\u0131 gastronomi mezunlar\u0131n\u0131n akademik kariyeri tercihi konusunda cayd\u0131r\u0131c\u0131 olabilmektedir.&nbsp;&nbsp;<br \/>\n\tGastronomi mezunlar\u0131n\u0131n say\u0131s\u0131 &ouml;n&uuml;m&uuml;zdeki y\u0131llarda art\u0131\u015f g&ouml;sterecektir. Gastronomi alan\u0131nda lisans&uuml;st&uuml; e\u011fitim i&ccedil;in gerekli &ouml;\u011fretim &uuml;yesi gereksinimi disiplinler aras\u0131 yakla\u015f\u0131m ve &uuml;niversiteler aras\u0131 i\u015fbirli\u011fiyle &ccedil;&ouml;z&uuml;lebilecektir. Gastronomi b&ouml;l&uuml;m&uuml;ne &ouml;\u011fretim eleman\u0131 istihdam ederken m&uuml;fredatlara uygun, alan\u0131nda uzmanla\u015fm\u0131\u015f &ouml;\u011fretim elemanlar\u0131n\u0131n se&ccedil;ilmesine &ouml;zen g&ouml;stermeli, bu konuda b&ouml;l&uuml;m kurullar\u0131 objektif davranarak karar vermelidir. Usta &ouml;\u011fretici ve teknik eleman olarak uzman istihdam edilmesinde ya\u015fanan zorluklar, mevzuatta konunun esnek olarak tan\u0131mlanmas\u0131 ve bu tip g&ouml;revlendirmelerde &uuml;cretlerin iyile\u015ftirilmesi ile a\u015f\u0131labilecektir. &Ouml;\u011fretim elemanlar\u0131n\u0131n uzmanl\u0131k alanlar\u0131na uygun derslerde g&ouml;revlendirilmeleri konusunda akademik liyakata uyulmas\u0131 gerekmektedir. Bu konuda b&ouml;l&uuml;m ba\u015fkanlar\u0131n\u0131n duyarl\u0131 olmas\u0131, g&ouml;revlendirmeleri objektif ve e\u011fitim kalitesini s&uuml;rd&uuml;rebilecek \u015fekilde yapmas\u0131 ve e\u011fitim komisyonlar\u0131n\u0131n olu\u015fturulmas\u0131 yararl\u0131 olacakt\u0131r. Gastronomi mezunlar\u0131n\u0131, akademik kariyere te\u015fvik i&ccedil;in akademik personelin &uuml;cretlerinin iyile\u015ftirilmesi, daimi stat&uuml;de olmayan &ouml;\u011fretim elemanlar\u0131n\u0131n &ouml;zl&uuml;k halklar\u0131 konusunda iyile\u015ftirme &ccedil;al\u0131\u015fmalar\u0131n\u0131n yap\u0131lmas\u0131 gerekmektedir. &Ouml;\u011frencilerin, akademisyenli\u011fe &ouml;zendirilmesi amac\u0131 ile konuyla ilgili konferans seminer vb. etkinliler d&uuml;zenlenmeli ve bu etkinliklere &ouml;\u011frencilerin kat\u0131l\u0131m\u0131 sa\u011flanmal\u0131d\u0131r.&nbsp;\n<\/p>\n<p>\n\t<strong>Fiziksel Yap\u0131 ve B&uuml;t&ccedil;e Sorunlar\u0131:&nbsp;<\/strong>Fiziksel yap\u0131, kaynak ve b&uuml;t&ccedil;e ile ilgili belirlenen temel sorunlara y&ouml;nelik olarak; uygulama alanlar\u0131nda yetersiz planlama, e\u011fitim i&ccedil;in ihtiya&ccedil; duyulan malzeme, ekipman, k\u0131yafet, teknoloji ve yay\u0131n temininde yeterli &ouml;denek ayr\u0131lmamas\u0131, yasa ve y&ouml;netmeliklerden kaynaklanan k\u0131s\u0131tlar\u0131n s&ouml;z konusu oldu\u011fu belirlendi. Ayr\u0131ca, gastronomi alan\u0131nda &uuml;nl&uuml; a\u015f&ccedil;\u0131lar, yazar ve ara\u015ft\u0131rmac\u0131lar\u0131n gastronomi b&ouml;l&uuml;mlerinde e\u011fitim verebilmelerinin &ouml;n&uuml;nde k\u0131s\u0131tlar\u0131n oldu\u011fu vurgulanmd\u0131. Ek olarak, &ouml;\u011frencilerin yurt i&ccedil;i ve yurt d\u0131\u015f\u0131 gezi, fuar, ba\u011fbozumu gibi gastronomi etkinliklerine kat\u0131l\u0131m &ouml;deneklerinin sa\u011flanmas\u0131nda sorunlar ya\u015fand\u0131\u011f\u0131 sonucuna ula\u015f\u0131ld\u0131. &nbsp;<br \/>\n\tYasalar, b&uuml;t&ccedil;e ve &ouml;deneklerle ilgili sorunlara &ccedil;&ouml;z&uuml;m bulma &ccedil;abas\u0131 b&ouml;l&uuml;m y&ouml;neticileri ve &ouml;\u011fretim elemanlar\u0131n\u0131 farkl\u0131 aray\u0131\u015flara y&ouml;nlendirdi\u011fine de\u011finildi. Bu &ccedil;&ouml;z&uuml;mlerden en yayg\u0131n olan\u0131 sponsorluk yolu ile eksikliklerin tamamlanmas\u0131d\u0131r. Ancak bu t&uuml;r &ccedil;&ouml;z&uuml;mler s&uuml;rd&uuml;rebilir olmaktan uzak ve k\u0131sa vadelidir. Sorunlar\u0131n giderilmesinde gerekli planlamalar\u0131n yap\u0131larak bu planlar\u0131n uygulanabilir hale getirilmesi, planlar\u0131 hayata ge&ccedil;irmek i&ccedil;in yeterli b&uuml;t&ccedil;e, &ouml;denek ayr\u0131lmas\u0131, gastronomi e\u011fitimi i&ccedil;in istisnalar sa\u011flayacak yasal d&uuml;zenlemelere gidilmesi gerekmektedir. &Ccedil;&ouml;z&uuml;mlerde g&ouml;rev alacak payda\u015flar da; b&ouml;l&uuml;m, fak&uuml;lte ve &uuml;niversite y&ouml;netimi ve ilgili birim yetkilileri, STK, sekt&ouml;r yetkilileri, yerel y&ouml;netimler, Y&Ouml;K ve ilgili bakanl\u0131k yetkilileri olmal\u0131d\u0131r.&nbsp;\n<\/p>\n<p>\n\t<strong>Gastronomi alg\u0131s\u0131:<\/strong>&nbsp;Gastronomi alg\u0131s\u0131 ile ilgili sorunlara y&ouml;nelik yap\u0131lan &ccedil;al\u0131\u015fmada, gastronominin zengin ve geni\u015f bir &ccedil;er&ccedil;evesinin bulunmas\u0131ndan dolay\u0131 bir&ccedil;ok alg\u0131ya neden olmaktad\u0131r. &Ouml;zellikle gastronomi tan\u0131m\u0131n\u0131n net olarak yap\u0131lamamas\u0131 en temel sorun olurken di\u011fer sorunlar\u0131n sekt&ouml;r, toplum, &ouml;\u011frenci ve akademik bak\u0131\u015f a&ccedil;\u0131s\u0131 olmak &uuml;zere d&ouml;rt ana ba\u015fl\u0131kta topland\u0131\u011f\u0131 s&ouml;ylenebilir. Sekt&ouml;r alg\u0131s\u0131n\u0131n genel olarak ucuz i\u015fg&uuml;c&uuml; ve alayl\u0131 a\u015f&ccedil;\u0131lar\u0131n mezunlar\u0131 yetersiz olarak g&ouml;rmesi \u015feklinde olmaktad\u0131r. &Ouml;\u011frenci alg\u0131s\u0131 olarak mezun olan &ouml;\u011frencilerin beklentilerinin y&uuml;ksek olmas\u0131 ve her konuda uzman olaca\u011f\u0131n\u0131 d&uuml;\u015f&uuml;nmesi \u015feklinde s&ouml;ylenebilir. Toplum bak\u0131\u015f a&ccedil;\u0131s\u0131 ile halk\u0131n &ouml;zellikle medya organlar\u0131n\u0131n gastronomiyi a\u015f&ccedil;\u0131l\u0131k, \u015feflik olarak parlak ve pop&uuml;ler meslek olarak yans\u0131tmas\u0131 gastronominin sadece a\u015f&ccedil;\u0131 veya \u015fef olarak alg\u0131lanmas\u0131na neden olmaktad\u0131r. Akademik bak\u0131\u015f a&ccedil;\u0131s\u0131 ile alg\u0131 sorunu ise gastronomi b&ouml;l&uuml;m&uuml;n&uuml;n farkl\u0131 fak&uuml;ltelerde yer almas\u0131 ve buna g&ouml;re farkl\u0131 misyonlar y&uuml;klenmesi \u015feklinde belirtilebilir.<br \/>\n\tYukar\u0131da s\u0131ralanan bu sorunlar\u0131n &ccedil;&ouml;z&uuml;m &ouml;nerileri olarak &ouml;zellikle gastronominin fark\u0131ndal\u0131\u011f\u0131n\u0131n artt\u0131r\u0131lmas\u0131, gastronomi bilincinin ilgili &ccedil;er&ccedil;eveye yerle\u015ftirilmesi gerekmektedir.
